As every year, the New Year of the Miller closes a cycle to start a new one. The most important celebration in the world of the white art of bakery is now at its fifth edition. Let's discover together why it is such a fundamental event.
For the flour world, the miller's New Year is the true squaring the circle, the alpha and omega of a year's work.
Actually, as Antimo Caputo himself, patron of Mulino di Napoli, defines it
"It is a real passing of the baton in the cultivation of wheat: a year of work ends with the harvest and a new one begins again in a perfect and never-ending cycle."
"The Miller's New Year is therefore also a fundamental time of reflection for the entire agricultural sector of the supply chain Grano Nostrum."
A supply chain established by Mulino Caputo and Green Farm together with so many farmers of excellence that now counts 3,000 hectares of land scattered throughout the South of Italy and beyond: Basilicata, Puglia, Molise, Campania, Lower Lazio and Abruzzo.
Behind a bag of Grano Nostrum flour there is the expertise of a mill that has been producing flours since 1924 - the year when the first factory was purchased in Campania (as Don Carmine Caputo tells) - and the research work of a specialized agronomic team led by Michele Mennino.
"The purpose and contribution of Green Farm within the Grano Nostrum supply chain - tells us Michele Meninno, founder of the company - is that of a production of excellence with low environmental impact and zero residues, i.e. without pesticides and chemical traces of any kind."
Precisely for this reason, Green Farm takes care of choosing the best soils, monitors them through a satellite system and provides farmers with advice in terms of the nutrition and cultivation aids needed to eliminate the use of chemicals.
The rest will be done of course by Nature and the selection of grains, carefully chosen to create a mix capable to assure excellent results in every condition.
Green Farm also takes care of storage and distribution of wheat in order to provide the mill with the right combination of 6 varieties of wheat at any time of the year.
In short, Nature is the true protagonist of the Grano Nostrum project and of the New Year of the Miller.
