So the production method used by Mulino Caputo for its flours can therefore be summarized in 4 steps
1) Careful choice of the best Italian and European grains. We select grains free of toxins, mold, and pesticides. The quality of the raw materials allows us to remove any non-natural processing step.
2) An accurate study. In order to produce specific flours ready to fulfill any artisan need, it is necessary to match the right crop types to achieve the intended product characteristics.
3) We use only wheat. So no enzymes, additives, and extra gluten.
4) And last but not least, all this selection work is completed by a very slow milling that respects the organoleptic characteristics of each single grain. Find out more about the slow milling technique here
