The word Nuvola immediately reminds us an image of a light, soft and melty dough and therefore it is not by chance that it was chosen by Mulino Caputo as the name of its product range for the new frontier of dough.
But what makes so special the Nuvola line and what the difference is there between these two flours for the contemporary doughs?


To understand what makes unique the Nuvola range, the key word is preferment.
Wheat, the only ingredient of our products, is indeed in this case pre-fermented. "Technically it means that the grains we use for these flours will be highly reactive to fermentation - says Mauro Caputo, technical area head of the mill of Naples – they are actually grains with a high amylase activity, therefore with a high level of sugars that acts both during the kneading and the leavening and baking".


Using pre-fermented grains therefore gives your dough:
An explosion of the honeycombed structure of the crumb
A product with a very high digestibility
A strong sugar caramelization during the baking
A crust with the right level of ambering and consistency, both for pizza and bread
So much tastiness
But what's the difference between Nuvola and Nuvola Super?
The force!


Nuvola
Nuvola is a flour with around 12% of protein content
Can be used for direct or indirect doughs
And does not need to be mixed with other flours


Nuvola Super
Nuvola Super has a higher content of around 13% - 13,5%
Can be used to lengthen the leavening times more than of that is possible with Nuvola
It performs ideally when used in those very stressful processing that require a support flour
It can be used for the production of pre-ferments such as biga, poolish or sourdough to be added to the final dough that will be completed with Nuvola.
