The Caputo method
We have always used a very slow grinding method , rooted in the ancient art of milling. This allows us to obtain the highest quality flours without damaging the starches , organoleptic properties, and above all, the authenticity of the flavor.
We blend a wide variety of Italian wheats from Umbria, Marche, and other Italian regions to create the base for our product. We then supplement them with grains from Northern Europe , particularly France, Germany, and Finland.
Our products are thus extremely natural, also because we process them without the addition of chemical enzymes or additives. This is the White Art of Caputo, the Mill of Naples.
Grano Nostrum
Mulino Caputo also adheres to the first soft wheat supply chain in Italy with the Grano Nostrum project , a common thread that connects the Mulino di Napoli to the experience of agronomic companies such as the Green Farm of Grottaminarda (AV) and to the work of many agricultural companies.
