When there are versatile raw materials capable of adapting to the needs of individual artisans, even the most traditional recipes can be given a new twist. This is the philosophy with which Mille & Un Babà was born, the contest dedicated to the prince of Neapolitan pastry making, which this year will see its second edition on March 20th at the Renaissance Hotel Mediterraneo.
The hunt for innovative pastry chefs is therefore officially open.
To participate in Mille & un babà you will need to submit your application by 10 March 2023 by sending an email to info@dfcomunicazione.it
The email must contain:
– the description and name of the dessert made;
– the recipe and technical explanation with particular attention to the preparation of the dough;
– the list of ingredients, listed in descending order, with an indication of any allergens present;
– the name and address of your business;
– a short CV
– and a half-length portrait, on a white background with a pastry chef's jacket.
The dessert to be proposed and prepared must be a contemporary version of the Neapolitan babà presented in single portions or on a tray made up of no more than 8 single portions.
To participate you will need to have at least 5 years of experience in pastry making and use high quality ingredients.
The recipe will be evaluated for
• Aesthetics
• Perfume
• Taste
• Color
The Jury will be made up of an excellent team coordinated by Antimo Caputo
