for 30-35 Roccocò

1.150 ed Fioreglut Dolci
150 gr honey
15 gr yeast
800 gr sugar
1kg whole toasted almonds
400 gr water
350 gr orange cubes
60 g hazelnut paste
5 gr cinnamon
To brush 1 egg 2 egg yolks

Gluten free blend of flours obtained from selected raw materials.

Method

Mix the flour with the yeast and sugar. Add the honey, the diced almonds, the hazelnut paste, the water and knead. Once everything is mixed, let it rest overnight in the fridge.
After letting the dough rest, cut pieces of dough, shape them and place the rococos on a baking tray with baking paper.
Brush the roccocò with eggs and bake until golden.

Gluten-free doughs tend to have a smaller and slower leavening, which is why they need to rest at least one night!
